Provenance
Our vineyard lies in the heart of the East Kent countryside, where every bottle begins with a deep respect for the place and the art of wine.
From planting to pressing, every decision is made with care and attention to detail. Our approach is local and considered. All of our grapes are grown on-site and produced and bottled down the road by an accomplished team of Winemakers at Defined Wine. This approach allows us to remain closely involved in each stage of winemaking while also supporting local expertise and considering our environmental footprint.


Terroir
Planted on a gentle, southwest facing slop, our 4,500 vines sit atop a base of chalk limestone soil, renowned for its excellent drainage and mineral complexity. A detailed assessment of the site's unique characteristics guided the selection of grape varieties: 50% Chardonnay 35% Pinot Noir and 15% Pinot Meunier. This blend reflects the nature of the land and the structure of world-class wines. The harmony between soil, slope and climate is what defines the personality of our wine, making them some of the happiest and juiciest around.
Wine and Winemaking

English Chardonnay
This 2022 English Chardonnay has been matured in second fill oak barrels for 4 months to soften the acidity and make a well balanced wine in the Burgundian style.

English Quality Rose
This 2022 English Quality Rose is a delightful blend of chardonnay, pinot noir and pinot meunier. It is pale pink in colour and has a flavour profile hinting at summer fruits so ideal for enjoying al fresco.

English Quality Sparkling Wine
This 2021 English Quality Sparkling Wine is a blend of 50% chardonnay, 35% pinot noir and 15% pinot meunier. It has benefited from almost 30 months secondary fermentation in bottle giving it a sophistication that is only achieved by allowing it to mature over time.
